dc.description.abstractA nutritionally rich lito was prepared suited for children from germinated wheat, green gram, and mustard green leaves. Five formulations A, B, C, D and E were formulated varying the proportion of mustard green leaves powder i.e., Control (0%), 5%, 10%, 15% and 20% respectively while keeping the amount of cereal and pulse constant in each formulation. The mustard green was dried, and wheat and green gram were germinated for 72 hours and mixed. The physiochemical analysis showed significant difference (p<0.05) in crude fiber, carbohydrate and energy content when compared to control sample A. The formulation containing 5% mustard green was selected as the best sample from sensory evaluation and statistical analysis. The protein, fat, carbohydrate, crude fiber, and total ash of the product were found to be 18.58%, 1.66%, 73.32%, 3.89% and 2.54% respectively. The food can supply 382.5 Kcal /100 gm. Germination significantly increased protein and calcium content of formulated weaning food. The iron and calcium content of the product was found to be 3.55 mg/100 gm and 50.23 mg/100 gm, respectively. The total cost for the preparation was calculated as NRs. 135 per Kg. Hence, the developed lito is nutritious and cost-effective weaning fooden_US
